Sartori Food was founded in 1939 as S&R Cheese Corporation. The company has expanded on the Wisconsin tradition of producing cheeses and has become one of the leaders in the specialty, aged Italian cheese business. Located in Plymouth, Wis., Sartori Food is a privately held, family owned company. In the 1950s, Sartori moved from canned milk to bulk milk production. Towards the end of the 1950s, the company became one of the first cheese companies to introduce enzymes in the production of Romano cheese, which is a common practice in aged Italian cheese making. In 1967, Sartori became one of the first domestic exporters of Italian cheeses to France and Japan. By the 1980s, Sartori had begun directing research and development operations toward developing cheeses and introduced a fresh-grated Parmesan with an extended shelf life. In 1995, the Italian Cheese Flavor Wheel was created. The wheel graphically describes the flavor profiles of various Italian cheeses.
