Bricks creates authentic pizza using Italian Denomination of Control and Associazione Verace Pizza Napoletana (VPN) standards, in the tradition of Naples, the birthplace of pizza. According to its website, Bricks is one of a just a few VPN-certified restaurants in the United States.
Each pizza is created by hand using a wood-fired oven at 800 degrees to create fresh pizza with a signature taste.
Le Pizze Napoletane on the menu are pizzas topped with a base of hand-stretched mozzarella and crushed San Marzano tomatoes. Patrons can also select additions or substitutions from the La Artista and Caspita portions of the menu, which include sliced cherry tomatoes, artichokes, pine nuts, proscuitto, house sausage, anchovies and other selections.
