In 1978, we purchased D&W Processing in Menard, TX. Initially, we continued to process animals for locals. As time passed, fewer ranchers fed out their own livestock and required processing services. At the same time, Max especially enjoyed curing and smoking and sausage manufacture. As he offered these products for sale, they were very well received. A demand for our pork tenderloin, beef tenderloin, jerky, and briskets quickly developed. Out of customer demand the mail order portion of the business was born. In 1981, we mailed out the first little one page flyer offering our products. Today, we offer a complete catalog with a variety of mesquite-smoked and barbecued meats and condiments.
