After an extensive remodel of the San Angelo Regional Airport, and the existing lessee preparing to move, a business opportunity was presented and we dove right in. It took 2 months of weekend work to remove the existing equipment, small wares, and inventory, at which point we began developing our concept and fanatically searching auctions and restaurant equipment dealers for the right gear. Over the next 8 months we slowly accumulated all the things we would need to transform what had previously been a Deli, into a full-blown grill, complete with open flame chargrilling capabilities. We built custom shelves, ran new electric lines, re-plumbed sinks, and gave the seating area a facelift. Our doors opened on February 10th, 2018, almost a year after making the initial commitment to The Mathis Grill, and while we are still a work in progress, we are excited about the opportunity and look forward to serving San Angelo!
