At Provence, the goal of our owner and executive chef, Daniel Darves-Bornoz is to prepare new, exciting cuisine along with your traditional favorites from the South of France. n 1978, Chef Darves-Bornoz graduated from the Culinary Institute of America. He continued his culinary training overseas in Paris and Brittany, France. There he honed his skills under master chefs for 3-years. Chef Darves-Bornoz then returned to the United States . After settling in Albany, Chef Darves-Bornoz opened Unique Catering. It quickly became one of the top caterers in the Capital district. In 1991, he opened Milano restaurant. Milano Restaurant specializes in Northern Italian cuisine including items such as pizza fired in a wood oven, homemade pasta, and a variety of specialty grilled items. Provence opened 1999, serving traditional and contemporary French and Mediterranean cuisine. With the opening of Provence, Chef Darves-Bornoz was able to expand the wine menu to over 150-selections. At Provence, we can accommodate up to 64-people for a seated dinner, or up to 85-people for a reception in our Bordeaux room. Enjoy a delicious meal in our gorgeous restaurant.
