Several vineyards on the North Fork use Premium Wine Group's facilities in Mattituck to make their wines, allowing vintners to produce wine in an economical way. Premium Wine Group produced 545 tons of wine during its first year in 2000 and has recently been able to produce 1,000 tons per year. Baiting Hollow Farms, Martha Clara Vineyards and McCall Farm Vineyards are just a few clients of this contract winemaking operation, which shares building space with Lieb Cellars in Mattituck.
