Our journey begins with us buying only the finest fresh caught and farm raised fish from our choice of waterways. It is then shipped daily from around the world to our facility, where we carefully select each fish by hand to meet our high standards. At every step of the process, modern technology is combined with the old fashioned skills of our staff. From our refrigerators and freezers, where perfect temperature is maintained to ensure freshness. Fish are then moved to the processing room to be cleaned by hand and prepared for brining. After brining in special refrigerators the fish is then washed, rinsed and carefully prepared to move to our state-of-the-art smoke houses..
