Renowned in Paris since 2012, New York’s Noglu is the only French bakery with a 100% gluten-free, 30% dairy-free and locally-sourced menu. But most importantly: it is delicious! Working only with organic products, owner Frédérique Jules spent years developing her recipes for gluten-free versions of French classics - brioche loaves, pound cakes, quiches and tarts. Arriving in New York in 2015, Frédérique adapted her line to American tastes adding hamburger buns, muffins and cookies. She also developed exquisite Jewish and vegan pastries. Where other gluten-free brands go to extremes to create “everything-free” items, the Noglu team has drawn a clear line on taste and texture: nothing will make it to the menu unless it’s thoroughly tasted, perfected and approved.
