Once upon a time, a child had a dream - to start a bubble tea shop, using real tea, with fresh ingredients. Back then, the only bubble tea options were cheap instant mixes at Chinese takeout shops. Few understood the origin of hand-shaken bubble teas, invented in Taiwan in the 1980s. Chasing the dream, in classic second-generation style, we went to Taiwan and packed an empty suitcase full of Taiwanese tea and tapioca. Amah (grandma) found out and grew angry that we were leaving school, jobs - the right path - to make tea. Alas, this dream was before its time. The market for bubble tea had not yet matured - people had not developed the taste for true bubble tea. The dream was deferred. Until now.
