History
Totto Ramen began in NYC, at a time when Japanese ramen was just beginning to enter the restaurant scene. Since then, ramen has permeated almost every major city, and Somerville is no exception! Caught up in all the hype of ramen is the fact that each restaurant, and bowl of noodles, is different. There are so many ways to prepare a bowl, and endless opportunities for innovation with the ingredients. We hope you'll stop by and give us a try - our unique chicken-based broth and all natural ingredients combine to form a distinct flavor and silky richness that traditional pork-based broths just cannot replicate. Specialties
While most ramen shops serve tonkatsu, which is a broth made with pork bones, at Totto Ramen we instead serve a chicken based broth. It starts with all natural chicken, vegetables, and spices - we slow cook that combination for at least six hours every day, to develop a rich and savory broth. After that, it's all about the noodles - we use two different types of noodles: one wavy, and one straight. To finish your bowl, we add the toppings: chicken or pork as the main protein, torched slightly for a charred taste and crispy texture, followed by scallions, onions, and a sheet of nori (seaweed). From there, you can choose an assortment of add-on toppings, such as bean sprouts, avocado, seasoned egg, mushrooms, and so much more.
