Creole Country Sausage Company, a beloved Mid-City sausage company in New Orleans, has been crafting Cajun charcuterie for over 30 years. Founded by Mary Fabiola Fab Schmitt and Frederick Ricker Schmitt in 1979, the company continues to thrive under the leadership of their son, Vaughn, and business partner, Deanie Bowen.

Renowned for their alligator and andouille sausage, tasso, and hogshead cheese, Creole Country has supplied a wide range of local eateries, from upscale restaurants to neighborhood po-boy joints. Despite the challenges faced during Hurricane Katrina, the determined owners successfully rebuilt the business, reopening on April 17, 2006.
