Chef Juan Hernandez has extensive culinary arts experience. He started cooking at a young age as a native of Spain. In 1986, he moved to New Orleans where he attended the well-known New Orleans Culinary Training Program. While in school, he perfected his culinary skills by working at several upscale New Orleans restaurants and hotels. Later he moved back to Spain expand his culinary skills by working at prestigious hotels like The Palace in Madrid and catering companies that catered to celebrities and members of the royal family. In 2001, he returned to New Orleans ready to open his own restaurant, Madrid. Today, he continues to serve the freshest of Mediterranean ingredients and dishes at Alberto's Cheese and Wine Bistro located at the New Orleans French Market.
