Calihan Pork Processors produces raw materials to companies that utilize its pork for finished, value-added, products. The company does not make a finished product and does not compete, either directly or indirectly, with its customers. During the summer of 1937, Russell Myatt, his brother Harry and Paul Calihan founded Calihan & Company, a small meat-packing plant adjacent to the Peoria Stockyards. For many years, the company slaughtered 35 to 40 cattle and a few hogs per day. Calihan delivered to local meat and food markets within 30 miles of its home in Peoria, Ill. At its peak, it slaughtered over 1,000 cattle a week delivering throughout Illinois and Indiana. Calihan has a plant capacity of more than 400 sows per day and supplies some of the leading fresh sausage makers.
