My grandma and mom always used their own creation of delicately balanced mixed spices unique to our family (species I am privileged to use in our restaurant Uchenna and that is what makes the taste and cuisine of Uchenna unlike any food you will ever have in any Ethiopian restaurant in the world). In my province and in my family, diverse dishes were prepared that are not used or eaten in the south therefore you may distinguish various taste and smell in the preparation of my cooking from the typical food you experienced in Ethiopian restaurant.
