History
James Jin, a former alcoholic, received his Sake Sommelier certification by Sake School of America in Los Angeles then went on to study about beer, wine and distilled liquor. He realized he has a focused interest in the production side and started home brewing beer and sake. He grew more and more passionate about brewery operations and visited many craft sake breweries and beer breweries. Determined to make his own craft sake in LA, he went to Japan to work at award-winning sake brewery and beer brewery for 3 months, then brought the techniques and knowledge to an old winery in Covina, then turned the place into a half sake brewery and half beer brewery. Inspired by the local Asian ingredients used in craft breweries during his time in Asia, he implements Asian flavors to the beers with the help of 10 year veteran beer brewer Patrick Bustos. The brewery hand-crafts all their beers and sake while California wine made in North Cali can also be enjoyed in the tasting room.
